Coconut flour is manufactured by grating the meat/flesh of fresh coconuts, then it is dehydrated and de-fatted (the oil are extracted). The resultant product is a fine powder that looks and feels like regular wheat and grain flours.
The pure/organic form doesn't even have a taste of coconut!
